Harvest Beer Cheese Soup

  1. Melt butter in 4-quart saucepan until sizzling; add apple and onion.
  2. Cook over medium-high heat 3-4 minutes or until onion begins to soften.
  3. Stir in flour and red pepper; continue cooking 1 minute.
  4. Add chicken broth and half & half.
  5. Continue cooking until mixture comes to a full boil.
  6. Add chicken, rice and beer; continue cooking until heated through.
  7. Add cheese; continue cooking, stirring occasionally, until melted.
  8. Top each serving with crumbled bacon, if desired.
