Thyme Roasted New Potatoes
- 2 lbs baby new potatoes
- 3 tablespoons fresh thyme, chopped
- 6 tablespoons olive oil
- Preheat the oven to 400F
- Put the new potatoes in a roasting tin with the thyme and season well with salt and freshly ground black pepper.
- Drizzle over the olive oil and roast for 45 to 50 minutes until golden brown and cooked through.
