Cabbage Rolls
- 1 1/2 lb. ground beef
- 1 c. cooked rice
- 1 small chopped onion
- 1/2 tsp. thyme
- 1 egg
- 1 or 2 tsp. salt
- 1/4 to 1/2 tsp. pepper
- 1 or 2 Tbsp. brown sugar
- 1 Tbsp. lemon juice
- 1 or 2 Tbsp. water
- 6 thick slices bacon, cut in half, cooked until crisp and drained
- 12 thin slices Gruyere cheese, halved
- 4 eggs, lightly beaten
- 2 c. light cream or creme fraiche, thinned with milk
- 1 Tbsp. flour
- nutmeg
- cayenne pepper
- white pepper
- 1 unbaked 9-inch pie shell
- Line pie shell with bacon and cheese slices overlapping to cover bottom of crust.
- Combine eggs, cream, flour, pinch of nutmeg, cayenne and black pepper.
- Beat well.
- Strain and pour over bacon and cheese slices.
- Bake in hot oven, 450u0b0, for 15 minutes.
- Reduce heat to 325u0b0 and bake for 30 minutes.
