Pasta And Beans
- 1 c. dried navy beans
- 1 lb. ditalini macaroni
- 1 c. chopped tomatoes canned or fresh
- 1/4 c. oil
- 1 tsp. oregano
- salt and pepper
- Wash beans and put in 6-quart pot, then bring to a boil.
- Turn stove off and let beans stand; set.
- Soak for 1 hour.
- Then turn stove back on and add salt, pepper, oregano, tomatoes and oil. Put on slow, cooking until tender, about 3 to 4 hours.
- Cover pot with a tight lid to keep the liquid from evaporating while you are cooking the beans.
- About 1 hour before they are eaten, cook ditalini for about 5 minutes in separate pot.
- Then drain macaroni and put it in the pot with beans, mixing well.
- Turn stove off under beans.
- The macaroni will finish cooking without heat from the stove when mixed with bean liquid.
- Serve with cheese.
