Chompin' good Chili
- 1 lb Ground beef
- 1 lb Ground pork
- 1 poblano pepper, chopped
- 1 jalapeno pepper. chopped
- 1 large onion, chopped
- 2 clove garlic, minced
- 3 tbsp chili powder
- 2 tbsp ground cumin
- 10 oz can Rotel tomato (get the hot if you like your chili spicier)
- 48 oz chili beans (with sauce)
- 12 oz beer (dark beer tastes great in this recipe)
- Brown ground beef and pork.
- Drain off fat.
- Add fresh chilies and onion.
- Cook for 5 minutes, until onion is translucent.
- Add garlic, chili powder, cumin, Rotel, chili beans and beer.
- Bring to a boil.
- Turn down the heat and cook covered for at least 30 minutes.
- If the chili is too thick, just add water or beer.
- You can add some heat to this by adding more peppers.
- I love to eat this with a nice crunchy grilled cheese sandwich.
- This (as all chili) is better the next day.
