Seafood Gumbo(Serves 8 To 10)
- 1 clove garlic, minced
- 6 green onions, chopped
- 1 bell pepper, chopped
- 3 Tbsp. corn oil
- 1 (10 oz.) pkg. okra (frozen, sliced)
- 2 (1 lb.) cans tomatoes, drained
- 3 c. water
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 drops Tabasco sauce
- 1 bay leaf
- 1/4 c. rice (uncooked)
- 1 lb. shrimp, shelled and deveined
- 1/2 lb. crabmeat
- 2 Tbsp. chopped parsley
- 1 tsp. file powder
- In Dutch oven saute garlic, onions and bell pepper in oil. Add okra, tomatoes, water, salt, pepper, Tabasco sauce, bay leaf and rice; bring to a boil.
- Cover and simmer for 10 minutes.
- Add shrimp (chopped) to Dutch oven; stir.
- Return to boil, cover and simmer for 3 minutes.
- Add crabmeat and parsley to shrimp mixture. Simmer for 2 minutes.
- Stir in file powder.
- Ladle gumbo into bowls; stir gently to mix all ingredients.
- Serve with extra boiled rice.
