Backyard Spanish Rice Recipe
- 2 Tbsp. extra virgin olive oil
- 1/2 c. minced tomato
- 1/2 c. minced red pepper
- 1/4 c. minced red onion
- 1 Tbsp. chopped garlic
- 2 c. long grain rice
- 3 1/2 c. cool water
- 2 Tbsp. rice wine vinegar
- 2 Tbsp. Worcestershire sauce
- 1 dsh salt and pepper splash freshly squeezed lemon juice splash freshly squeezed lime, juice
- Heat oil in Dutch oven over medium heat.
- Add in onions, peppers, and garlic, and saute/fry for 1 minute or possibly till softened.
- Add in tomatoes, rice, water, vinegar, Worcestershire sauce, salt and pepper, bring to a boil, cover, and turn heat to low.
- Simmer, covered for 20 min or possibly till rice is tender.
- Remove lid, fluff rice with a fork and sprinkle lemon and lime juice over top.
- Serve immediately.
