Island Chicken And Rice
- 2 Tbsp. vegetable oil
- 4 chicken breasts
- salt and pepper to taste
- 2 Tbsp. cornstarch, divided
- 1/2 c. onions, chopped
- 1 (16 oz.) can sliced peaches, reserve juice
- 2 Tbsp. soy sauce
- 2 Tbsp. vinegar
- 1 medium green pepper, cut in small strips
- 1 medium tomato, chopped
- 3 c. hot cooked rice
- 1/4 c. slivered almonds, toasted
- Sprinkle chicken with salt, pepper and 1 tablespoon cornstarch.
- Brown chicken and onions in oil until lightly brown. Blend peach juice, soy sauce, vinegar and remaining cornstarch; pour over chicken.
- Cook, stirring constantly, until clear and thickened.
- Add peaches, green pepper and tomatoes.
- Simmer until green pepper is tender.
- Serve over rice; sprinkle almonds on top. Makes 6 servings.
