Island Chicken And Rice

  1. Sprinkle chicken with salt, pepper and 1 tablespoon cornstarch.
  2. Brown chicken and onions in oil until lightly brown. Blend peach juice, soy sauce, vinegar and remaining cornstarch; pour over chicken.
  3. Cook, stirring constantly, until clear and thickened.
  4. Add peaches, green pepper and tomatoes.
  5. Simmer until green pepper is tender.
  6. Serve over rice; sprinkle almonds on top. Makes 6 servings.
