Figure-Friendly Turkey Meatballs
- 1- 1/4 pound Ground Turkey
- 2 slices Whole Wheat Bread, Torn Into Pea-sized Pieces (2 Slices Should Yield About 1 Cup)
- 1 whole Egg
- 1 Tablespoon Chili Powder
- 1 teaspoon Dried Oregano
- 1 teaspoon Sea Salt
- 1/2 teaspoons Freshly Cracked Black Pepper
- 13 cups Finely Diced Onion
- 13 cups Finely Diced Nectarines
- 13 cups Shredded Carrots
- 1/2 cups Barbeque Sauce (plus More For Serving)
- Heat the oven to 350 F and line a rimmed baking sheet with a Silpat or parchment paper.
- Mix all of the ingredients with the exception of the barbeque sauce in a large bowl until everything is well distributed, but not more than that.
- You dont want to handle the mixture more than you have to.
- Flatten the mixture in the bowl, and score it into quarters with your hands.
- With each quarter, make three equal-sized meatballs, and place them on the parchment lined baking sheet.
- With a pastry or grilling brush, coat the meatballs with barbeque sauce, then place the pan into the oven for 30 minutes.
- Remove from oven.
- Serve the meatballs with slices of nectarines, roasted asparagus, and extra barbeque sauce.
