Chocolate Oatmeal Cookies
- 1 cup butter or 1 cup margarine, softened
- 1 12 cups granulated sugar
- 1 cup packed light brown sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 12 cups flour
- 12 cup cocoa
- 1 teaspoon baking soda
- 12 teaspoon salt
- 3 cups quick-cooking rolled oats
- 12 cup chopped nuts
- Preheat oven to 350F.
- In a large bowl beat together butter, granulated sugar and brown sugar until light and fluffy.
- Add eggs and vanilla and beat until combined.
- In a separate bowl, stir together flour, cocoa, baking soda and salt; gradually add to butter mixture while stirring.
- Do not over mix.
- Stir in oats and nuts until combined.
- (Batter will be thick and stiff).
- Drop by rounded tablespoonfuls onto ungreased cookie sheet.
- Bake 11 to 12 minutes or until set; cookies will be slightly moist in the center.
- Try not to overbake.
- Cool 1 minute on cookie sheet and then transfer to wire rack to cool completely.
