Foil-Pack Creamy Chicken & Mushroom Dinner
- 1 can (10 fl oz/284 mL) condensed cream of mushroom soup
- 3/4 cup hot water, divided
- 1 pkg. (120 g) Stove Top Stuffing Mix for Chicken
- 4 small boneless skinless chicken breasts (1 lb./450 g), 1/2 inch thick
- 80 g thinly sliced deli smoked ham, chopped
- 1-1/2 cups sliced fresh mushrooms
- 1-1/2 cups frozen peas
- Heat oven to 400F.
- Mix soup and 2 Tbsp.
- hot water; set aside.
- Combine stuffing mix and remaining hot water; spoon onto centres of 4 large sheets heavy-duty foil.
- Top with chicken, ham, vegetables and soup.
- Fold foil to make 4 packets; place on baking sheet.
- Bake 30 to 35 min.
- or until chicken is done (170F).
- Cut slits in foil to release steam before opening packets.
