Honey Lemon Yogurt Muffins
- 1/4 c. honey
- 4 Tbsp. butter
- 4 Tbsp. plain yogurt
- 1 egg
- 1/4 c. freshly squeezed lemon juice
- 1/2 tsp. freshly grated lemon rind
- 1 c. flour
- 1 c. whole wheat flour
- 1/4 tsp. nutmeg
- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. chopped walnuts (optional)
- Preheat oven to 375u0b0.
- Butter a muffin tin.
- Melt butter and honey together.
- Remove from heat.
- Beat together yogurt, egg, lemon juice and rind.
- Add butter and honey mixture.
- Beat well. Sift dry ingredients into a bowl.
- Make a well in the center and add wet ingredients.
- Stir just to combine; gently fold in nuts. Fill muffin cups 2/3 full.
- Bake for 25 minutes or until done.
