Sausage and Pumpkin Pasta
- 1 lb. rigatoni
- 8 oz. spicy Italian sausage
- 5 fresh sage leaves
- 1 can pure pumpkin
- 1/2 c. grated Parmesan cheese
- Cook rigatoni as label directs, reserving 1 cup cooking water.
- In 12-inch nonstick skillet, cook sausage on medium 6 minutes, breaking up sausage.
- Add fresh sage leaves; cook 1 minute, stirring.
- Add pumpkin and reserved pasta water; mix well.
- Drain pasta; return to pot.
- Add sausage mixture; heat through.
- Stir in Parmesan.
