Miso Tomato Salsa
- 1 pound Tomatoes, Diced
- 1/2 whole Onion, Diced (approximately 1/2 Cup)
- 1 clove Garlic (large), Minced Or Grated On A Microplane
- 1 whole Large Jalapeno, Chopped
- 13 bunches Cilantro Leaves (large Handful), Chopped
- 1- 1/2 Tablespoon Red Miso
- 1 Tablespoon Seasoned Rice Vinegar Or Lime Juice
- 1/4 teaspoons Sesame Oil (optional)
- 1.
- Mix all of the ingredients in a bowl and adjust ingredients to taste.
- 2.
- Cover and refrigerate for at least 1 hour to allow flavors to blend.
- Note that the sesame and miso flavors will mellow slightly.
- Yield: 2 cups
- Note: sesame oil has a very strong flavor and some folks might prefer to omit it.
- I recommend taking a small amount of the salsa aside and adding just a few drops to see if this is your cup of tea before adding it to the whole batch.
