Lazy Cordon Bleu: Chicken Roll Ups
- 3 whole Thawed Boneless, Skinless Chicken Breasts
- 3 Tablespoons Dried Herbs Of Choice (I Used Thyme, Basil And A Little Bit Of Crushed Red Pepper Flakes)
- 1 Tablespoon Salt And Pepper
- 2 Tablespoons Dijon Mustard
- 3 slices Cheese (I Used Havarti, Slice Big Enough To Cover Chicken)
- 3 slices Prosciutto
- Preheat oven to 400 degrees F. Butterfly and flatten your chicken breasts (I put them between sheets of plastic wrap and pounded them gently with a mallet until they were even thickness).
- Season both sides of the chicken with your choice of herbs and salt and pepper.
- Spread Dijon mustard on one side.
- On the same side add your meat and cheese.
- Roll up the chicken breasts and stick them with toothpicks to keep them rolled.
- Put them into a baking dish, seam side down.
- Bake in the heated oven for 30 minutes or until inside reaches 165 degrees F.
