Lemon Rice Pudding

  1. In a saucepan, bring water, rice, raisins and nutmeg to a boil.
  2. Reduce heat; cover and simmer for 15-20 minutes or until all liquid is absorbed.
  3. Cool.
  4. Prepare pudding mix according to package directions.
  5. Stir in rice mixture and lemon peel.
  6. Serve immediately or refrigerate.
