Roasted Peppers With Herbs
- 3 large red bell peppers
- 3 large yellow bell peppers
- 3 large green bell peppers
- 3 garlic cloves, minced
- 2 -3 tablespoons olive oil
- 1 tablespoon italian seasoning
- salt and pepper
- 1 slice baguette
- Cut peppers into 1/2 inch slices; cut slices in half.
- Combine peppers and garlic in 13x9 inch baking dish; drizzle with oil and toss to coat.
- Bake at 400* for 35-40 minutes, or until peppers are tender and beginning to brown, stirring occasionally.
- Sprinkle with Italian seasoning and season to taste with salt and pepper.
- Serve on baguette.
