Pineapple Mint Freeze Recipe

  1. Drain pineapple, reserving syrup.
  2. In saucepan soften gelatin in syrup.
  3. Add in jelly and dash of salt; heat and stir till gelatin is dissolved and jelly melted, if needed beat to blend jelly.
  4. Stir in pineapple.
  5. Refrigeratetill mix is thickened and syrupy.
  6. Whip cream with sugar; fold into thickened gelatin mix.
  7. tint with a few drops green food coloring if you like.
  8. Spoon into 8 1/2" x 4 1/2" x 2 1/2" loaf pan.
  9. Freeze till hard.
  10. Let stand at room temperature 10 to 15 min before serving.
  11. Unmold; slice and place on lettuce lined salad plates.
  12. Garnish with fresh mint sprigs, if you like.
  13. Serves 8.
