Crusty Crab Burgers With Red Pepper Slaw
- 1 lb. cooked crabmeat, picked over to remove any shell or cartilage
- 2 large scallions, minced
- 2 tsp. grainy mustard
- 1/4 c. mayonnaise
- 1/4 tsp. hot pepper sauce
- 1/4 tsp. cayenne pepper
- salt and freshly ground black pepper
- 1 1/2 c. fresh bread crumbs
- 1 egg
- 1 Tbsp. vegetable oil
- 4 Tbsp. unsalted butter
- 4 soft sesame seed hamburger buns
- Red Pepper Slaw
- In a medium bowl, combine the crabmeat, scallions, mustard, mayonnaise, hot pepper sauce, cayenne and salt and pepper to taste.
- Mix well. Gently fold in 1/2 cup of the bread crumbs. Form the mixture into 4 patties. Refrigerate for about 10 minutes to set.
