Banana & Walnut Muffins
- 245 g self-raising flour
- 110 g caster sugar
- 50 g light brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 bananas
- 1 large egg
- 8 tablespoons vegetable oil
- 12 cup walnuts
- 1 teaspoon vanilla essence
- 12 teaspoon cinnamon
- Sift the flour into a bowl and add the baking powder, salt, sugar & cinnamon.
- In a food processor / blender (or in a large bowl) mix the vegetable oil with the bananas, egg, melted butter (cooled) & vanilla essence.
- Put this mixture in a large bowl.
- Using as little mixing as possible, add the dry ingredients to the wet ingredients along with half a cup of crushed walnuts.
- Try to incorporate the ingredients with as little mixing as possible as over-working the batter leads to tougher muffins.
- Place into muffin cases in a muffin tin and bake in a preheated oven for approx 15 minutes at 180 degrees.
- This makes approx 6 large muffins but you can make smaller ones if you prefer, which would yield approx 9-12 muffins.
