Bruschetta with Goat Cheese

  1. Preheat oven to 350 degrees F.
  2. Cut bread.
  3. Using a pastry brush, spread olive oil on each piece of bread.
  4. Salt and pepper each piece.
  5. Add goat cheese to each piece of bread (dont worry about spreading it on there evenly, let the oven help you).
  6. Bake for 10 minutes or until cheese is melted.
  7. Cut cherry tomatoes into tiny pieces.
  8. In a bowl, add tomatoes, mozzarella cheese, basil, and stir.
  9. Spoon mixture onto each piece of bread.
  10. Drizzle lightly balsamic vinegar onto each piece of bread.
  11. Enjoy while hot!
