Bruschetta with Goat Cheese
- 5 slices Bread, Cut In Fourths
- 1/2 cups Olive Oil
- Salt And Pepper
- 1 package (8 Oz. Size) Goat Cheese
- 1 pint Cherry Tomatoes, Chopped Finely
- 1 cup Small Mozzarella Balls
- 2 Tablespoons Chopped Basil
- Balsamic Vinegar For Drizzling
- Preheat oven to 350 degrees F.
- Cut bread.
- Using a pastry brush, spread olive oil on each piece of bread.
- Salt and pepper each piece.
- Add goat cheese to each piece of bread (dont worry about spreading it on there evenly, let the oven help you).
- Bake for 10 minutes or until cheese is melted.
- Cut cherry tomatoes into tiny pieces.
- In a bowl, add tomatoes, mozzarella cheese, basil, and stir.
- Spoon mixture onto each piece of bread.
- Drizzle lightly balsamic vinegar onto each piece of bread.
- Enjoy while hot!
