Simple Soba Noodles with Sesame Peanut Dressing
- 1 package (8 Oz. Package) Soba Noodles Or Pasta
- 3/4 cups Peanut Butter
- 1/4 cups Rice Wine Vinegar
- 2 Tablespoons Brown Sugar
- 2 cloves Garlic, Minced Fine
- 1 Tablespoon Sesame Oil
- 1 teaspoon Grated Ginger
- 1 pinch Red Chili Flakes
- 18 cups Olive Oil
- Cook soba noodles according to package directions.
- Drain.
- If chilled salad is preferred, drain and rinse under cold water.
- If hot, simply drain.
- Mix next 7 ingredients (peanut butter, rice wine vinegar, brown sugar, garlic, sesame oil, ginger, and red chili flakes) together in bowl and whisk until well-blended and creamy.
- Drizzle olive in while whisking.
- If desired, sauce can be heated in the microwave for about 60 seconds if warm noodles are preferred.
- Pour over noodles.
- Its delicious both ways!
- Add any chopped veggie of your choice and chicken for a great healthy meal!
