Black Bean Croquettes
- 2 cans black beans
- 1 TB cumin
- 1 cup corn
- 2/3 cup bread crumbs
- 2 tomatoes
- 2 cups scallions
- 1/4 cup cilantro
- 1 1/2 tsp chili powder
- 1 avocado
- Dice black beans and cumin in food processor.
- Add a 13 cup of bread crumbs.
- Combine tomato, scallion, cilantro, and 1/2 teaspoon of chili powder.
- Add 1 cup of this to beans.
- Roll mixture into balls, and then place balls in the rest of bread crumbs and chili powder.
- Bake at 425.
