Black Bean Croquettes

  1. Dice black beans and cumin in food processor.
  2. Add a 13 cup of bread crumbs.
  3. Combine tomato, scallion, cilantro, and 1/2 teaspoon of chili powder.
  4. Add 1 cup of this to beans.
  5. Roll mixture into balls, and then place balls in the rest of bread crumbs and chili powder.
  6. Bake at 425.
