Bran Fruit Loaf
- 2 cups all-bran cereal
- 12 cup brown sugar
- 1 cup dates, chopped
- 1 cup dried apricot, chopped
- 150 g walnuts
- 1 cup self-rising flour
- 1 teaspoon baking powder
- 1 cup milk
- 12 cup vegetable oil
- 1 large egg, lightly beaten
- Preheat oven to 180C Lightly grease and line a 10cm by 20cm loaf tin.
- Combine first 7 ingredients in a medium bowl.
- Pour in milk, oil and egg and stir until well combined.
- Spoon mixture into prepared tin and bake for 30 minutes.
- Cover with foil and bake for a further 15 to 20 minutes or until a skewer inserted into the centre comes out clean.
- rest in pan for 5 minutes before turning out.
