Saucy Duck Recipe
- 6 small ducks
- 3 small onions, cut in half
- salt
- 1/2 c. vinegar
- red peppercorns
- thyme
- Worcestershire sauce
- bay leaves
- salt and pepper
- 6 strips bacon
- 3 Tbsp. cornstarch
- 2 Tbsp. sugar
- 1 can frozen orange juice concentrate
- 2 c. water
- 1/2 c. chopped olives
- Clean ducks. Put half an onion inside each and salt generously inside and out. Place in large pot to tenderize, using pot half full of water and adding 1/2 cup vinegar.
- Add peppercorns, thyme, Worcestershire sauce and bay leaves and boil until ducks are tender, but not falling apart.
- Remove ducks from vinegar solution, wash and remove onion.
- Arrange, breast side down, in deep roasting pan. Sprinkle with salt and pepper and put a strip of bacon on each duck.
- Mix sugar and cornstarch and blend in orange juice concentrate.
- Slowly add 2 cups water and cook over low heat until mixture is hot.
- Add chopped olives and pour sauce over ducks.
- Bake at 350u0b0 in covered roasting pan for about 1 hour, basting often.
