Saucy Duck Recipe

  1. Clean ducks. Put half an onion inside each and salt generously inside and out. Place in large pot to tenderize, using pot half full of water and adding 1/2 cup vinegar.
  2. Add peppercorns, thyme, Worcestershire sauce and bay leaves and boil until ducks are tender, but not falling apart.
  3. Remove ducks from vinegar solution, wash and remove onion.
  4. Arrange, breast side down, in deep roasting pan. Sprinkle with salt and pepper and put a strip of bacon on each duck.
  5. Mix sugar and cornstarch and blend in orange juice concentrate.
  6. Slowly add 2 cups water and cook over low heat until mixture is hot.
  7. Add chopped olives and pour sauce over ducks.
  8. Bake at 350u0b0 in covered roasting pan for about 1 hour, basting often.
