Ham Loaf
- 4 slices pineapple
- 4 maraschino cherries
- 3/4 c. brown sugar
- 1 tsp. dry mustard
- 1/4 c. vinegar
- 1/2 c. pineapple juice
- 1 1/2 lb. ground ham
- 1 lb. fresh ground pork
- 1 c. cracker crumbs
- 2 eggs
- 1 c. milk
- 3/4 tsp. salt
- Blend together the brown sugar, mustard, vinegar and pineapple juice.
- Mix the ham, pork, crumbs, eggs, milk and salt together. Place pineapple and cherries in bottom of pan.
- Place meat on top of pineapple; shape into ham.
- Pour sauce over loaf; bake, covered, for 3/4 hour.
- Remove cover and finish baking.
- Drain off sauce and invert on platter.
- Bake for 1 1/2 hours at 350u0b0.
- Small oblong roaster works best.
