Texas Crude Cake(Microwave)
- 1 c. margarine (2 sticks)
- 1/2 c. plain cocoa powder
- 2 c. sugar
- 4 eggs
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 1/2 c. flour
- 2 tsp. vanilla
- 1/2 c. pecan pieces (optional)
- 1 1/4 c. small marshmallows (or marshmallow cream)
- Mexican vanilla (gives a spicy flavor)
- Melt
- margarine
- on High power in a 2-quart batter bowl for
- 1 1/2
- to 2 minutes.
- With a wooden spoon, beat in cocoa and sugar,
- then
- eggs.
- Blendtn
- baking
- powder, salt, and flour. Stir
- in
- vanilla and pecans.
- Spread evenly in an 8 x 12-inch dish.
- Rotating dish a quarter, turn every 3 minutes. Microwave ont0%
- (Medium
- High)
- power for 11 to 12 minutes until
- done. Distributetarshmallows evenly over hot cake in pan.
- Cover
- with plastic
- wrap;
- let
- stand
- for
- 5 minutes. Uncover and spread marshmallows over top.
- Cool.
