Broiled Flank Steak Pinwheels
- 1 large (1 1/2 lb.) flank steak
- 1 Stove Top stuffing mix (4 to 6 servings)
- salt
- pepper
- A.1. sauce
- Prepare stuffing according to package directions.
- Lay out meat on cutting board; sprinkle with tenderizer.
- Season as desired and beat with tenderizer hammer to a rectangular shape. Spread cooked stuffing on meat about 1/2-inch thick and roll meat like a jelly roll, being sure to roll with grain of meat running lengthwise.
- Push toothpicks all the way into roll to hold together.
- Space toothpicks 1-inch apart starting at 1/2-inch from one end.
- Cool roll in refrigerator 1 hour.
- Remove roll from refrigerator and cut into 1-inch thick pinwheel slices.
- Baste meat heavily on both sides with A.1. sauce.
- Place wheels on cookie sheet and broil or barbecue for 7 minutes per side.
- Serves 4 to 6.
