No-Cook No-Sugar Light Blueberry and Strawberry Spread

  1. Rinse clean plastic containers and lids with boiling water.
  2. Dry thoroughly.
  3. Crush blueberries thoroughly, one layer at a time.
  4. Measure exactly 1-1/2 cups prepared blueberries into large bowl.
  5. Hull and crush strawberries thoroughly, one layer at a time.
  6. Add exactly 1-1/2 cups prepared strawberries to blueberry mixture in bowl.
  7. Stir in lemon juice, low calorie sweetener and pectin crystals.
  8. Let stand 30 min., stirring occasionally.
  9. Fill all containers immediately to within 1/2 inch of tops.
  10. Wipe off top edges of containers; immediately cover with lids.
  11. Let stand at room temperature until set.
  12. (May take up to 24 hours.)
  13. Store in refrigerator up to 1 week or freeze extra containers up to 1 year.
  14. Thaw in refrigerator before using.
