Baker's Rich Egg Sandwich
- 2 slice Sliced bread
- 2 Eggs
- 3 tbsp Mayonnaise
- 1/4 tsp Salt
- 1 Margarine
- 1 dash Japanese mustard
- Make a hard boiled egg.
- In a pot, put in just enough water to cover an egg (but don't put the egg in yet) and boil.
- Once the water is boiling, turn the heat to medium and put the egg in the water.
- Boil for 10 minutes and turn off the heat.
- Keep the egg in the hot water for another 15 minutes.
- Pour in water to cool and then peel the egg.
- Put the egg into a bowl and mash with a fork until crumbly.
- When the egg has become crumbly, mix in the mayonnaise and salt.
- Spread the margarine and Japanese mustard on a slice of bread.
- Pile the egg mixture high (like a mountain) onto the middle of the bread.
- Top with another slice of bread, then while holding down the sides with chopsticks pressed down by your fingers, cut off the crusts.
- Cut the sandwich in half and enjoy.
