Grilled Tarragon Chicken Salad Wraps
- Chicken Salad
- 1 gal. grilled boneless skinless chicken breasts, diced
- 2 cups Pure Kraft Refrigerated Ranch Dressing
- 2 cups celery, finely diced
- 1 cup scallions, chopped
- 1/3 cup fresh tarragon, chopped
- 2 tsp. cracked black pepper
- Salad Wraps
- 48 each napa cabbage leaves
- 96 slices plum tomatoes, sliced
- 1 qt. cucumbers, thinly sliced
- 3 cups jicama, julienned
- Chicken Salad: Combine ingredients in bowl; toss lightly.
- For each serving: Arrange 3 cabbage leaves on dinner plate.
- Top evenly with 2 oz.
- (60 g) tomatoes, 1 oz.
- (30 g) cucumbers, 0.75 oz.
- (20 g) jicama and 1 cup (250 mL) Chicken Salad.
