Lower-Fat Zucchini Stuffing Casserole

  1. Saute zucchini and onion in olive oil until soft.
  2. Add salt, pepper, and garlic powder.
  3. In a casserole dish, combine soup, sour cream, and 1 c of stuffing mix.
  4. When zucchini and onion are soft, but not mushy, fold into casserole.
  5. Top with 1/2 c of stuffing mix.
  6. Bake at 350 for 20-30 minutes.
