Gingered Beet and Orange Salad
- one bunch fresh beet
- two orange
- one tablespoon sugar
- one tablespoon ginger
- one tablespoon cornstarch
- water
- Clean, peel, and slice beets.
- Place the beets in a large pot.
- Add the ginger, sugar, zest , and juice from one of the oranges.
- Cover the beets with water and bring to a boil.
- Reduce heat and simmer for one hour.
- Add more water as needed.
- Mix the cornstarch with 1/4 cup of cold water and add it to the beets during the last five minutes of simmering.
- Let the beets cool.
- Peel and section the second orange.
- Add the orange to the beet mixture.
- Stir to coat.
- Serve well-chilled.
