Swiss Chard Risotto

  1. Heat oil in a large stock pot.
  2. Saute onions until caramelized.
  3. Add chard stems and rice and saute 3 minutes.
  4. Add white wine and stir until evaporated.
  5. Add chard leaves until wilted, about 3 minutes.
  6. Add 1/2 cup heated broth, stir until evaporated.
  7. Continue adding broth in 1/2-cup increments until rice is al dente.
  8. Stir in raisins until incorporated.
  9. Remove from heat and stir in 1/2 cup parmesan cheese.
  10. Serve individual plates with remaining cheese.
