Swiss Chard Risotto
- 3 Tablespoons Grapeseed Oil
- 1 whole Onion, Diced
- 1 bunch Swiss Chard, Stems And Leaves Separated
- 1- 1/2 cup Arborio Rice
- 1/2 cups White Wine
- 5- 1/2 cups Vegetable Broth, Heated
- 1/4 cups Raisins, Soaked, Drained, And Chopped
- 3/4 cups Parmesan Cheese, Grated
- Heat oil in a large stock pot.
- Saute onions until caramelized.
- Add chard stems and rice and saute 3 minutes.
- Add white wine and stir until evaporated.
- Add chard leaves until wilted, about 3 minutes.
- Add 1/2 cup heated broth, stir until evaporated.
- Continue adding broth in 1/2-cup increments until rice is al dente.
- Stir in raisins until incorporated.
- Remove from heat and stir in 1/2 cup parmesan cheese.
- Serve individual plates with remaining cheese.
