Chicken-Vegetable Sandwich Filling

  1. Thoroughly mix all ingredients.
  2. Chill.
  3. Use about 1/4 cup filing per sandwich.
  4. Calories per serving: About 100 for filling, 235 for a sandwich made with 2 slices of bread.
  5. VARIATION: Tuna-Vegetable Sandwich Filling -- Use a9 1/2 ounce can of tuna in place of the chicken.
  6. About 125 calories per serving for filling; 260 for a sandwich made with 2 slices of bread.
  7. NOTE: Filling can be made the day before using.
  8. Store tightly covered in the refrigerator.
  9. Stir lightly before making sandwiches.
