Grilled Corn and Black Bean Salad
- 2 1/2 cups frozen grilled corn, thawed, or 5 ears corn, grilled and kernels removed
- 1 14-oz. can black beans, rinsed and drained
- 1 yellow bell pepper, cut into 1/2-inch dice (about 1 cup)
- 3/4 cup grape tomatoes, halved
- 3 Tbs. coarsely chopped cilantro
- 2 Tbs. olive oil
- 2 Tbs. fresh lime juice
- 1 small jalapeno, seeded and finely chopped (about 1 Tbs.)
- 1/2 tsp. ground cumin
- Toss together all ingredients in large serving bowl.
- Season to taste with salt and pepper, and serve.
