Fettucini With Shrimp
- 1 Tbsp. olive oil
- 8 oz. pkg. shrimp
- 1/2 c. green onions
- 3 cloves garlic, minced
- 3 medium tomatoes, diced
- 1/8 tsp. pepper
- 3/4 c. dry white wine
- 1 Tbsp. cornstarch
- 1/2 c. plain yogurt
- 3 Tbsp. basil leaves
- 3 c. cooked fettucini
- 3 Tbsp. Parmesan cheese
- Heat oil; add shrimp and saute 2 minutes.
- Remove and set aside.
- In same pan, saute onions, garlic, tomatoes and pepper 1 to 2 minutes.
- Add wine and cook over low heat 2 to 3 minutes. Combine cornstarch and yogurt; add to skillet.
- Add basil.
- Return shrimp to skillet; cook 3 to 4 minutes until mixture is thickened. To serve, place 1/2 cup fettucini on plates; top with shrimp mixture and sprinkle with Parmesan cheese.
- Makes about 6 servings.
