Plantation Pride Cake
- 2 c. sifted Pillsbury's Best all-purpose flour
- 1 Tbsp. cocoa
- 1 tsp. soda
- 1/2 tsp. salt
- 1/2 c. Land O Lakes butter with 1 c. buttermilk or sour milk
- 1 3/4 c. firmly packed brown sugar
- 2 unbeaten eggs
- 1 tsp. Burnett's pure vanilla
- Sift the first 4 ingredients together.
- Melt butter with buttermilk or sour milk.
- Cool to room temperature.
- Combine brown sugar, eggs and vanilla in mixing bowl.
- Add dry ingredients alternately with buttermilk mixture, beginning and ending with dry ingredients.
- (With electric mixer, use a low speed.)
- Turn into a 13 x 9-inch pan, greased and floured on bottom.
- Bake at 375u0b0 for 25 to 30 minutes until cake springs back when touched lightly in center.
- Spread with topping.
- Broil, watching carefully, until bubbly and golden brown, 2 to 3 minutes.
