Southwest Potato Casserole #5FIX
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 1 (15 ounce) can black beans, drained
- 1 cup frozen corn kernels
- 1 (10 ounce) container Philadelphia Santa Fe Blend Cooking Creme
- 2 cups shredded Mexican blend cheese
- Preheat oven to 375 degrees.
- Spray a 8x8 glass baking dish with cooking spray.
- In a large bowl, combine potatoes, black beans, corn and cooking creme.
- Stir in half of cheese.
- Pour potato mixture into baking dish.
- Sprinkle with remaining cheese.
- Bake for 25-30 minutes, or until cheese is golden brown and bubbly.
- Remove from oven and serve.
- Recipe serves 4-6 and can be prepared in one hour.
