Lori's Oil Poached Fish

  1. Rinse and dry fish.
  2. Pour enough oil in a deep skillet to cover fish.
  3. Add the garlic and parsley.
  4. Bring to a gentle simmer.
  5. Add fish.
  6. Poach over low heat for 15 minutes.
  7. The oil should not be bubbling!
  8. Remove fish with a slotted spoon to paper towels.
  9. Dab off excess oil, if any.
  10. Place on plates.
  11. Season.
  12. Top with a little of the "green oil".
  13. Serve with lemons.
