Chocolate Mint Chip Cookies
- 1 1/4 cup all-purpose flour
- 1 tsp baking powder
- 2/3 cup unsweetened cocoa powder
- 1/2 cup butter, room temp
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup dark brown sugar
- 1 1/2 tsp vanilla extract
- 3 tbsp 2% milk
- 1 large egg
- 1 1/2 cup green mint chips
- 1 cup white chocolate chips
- Preheat oven to 325F
- Sift together all dry ingredients into a medium bowl.
- In another medium bowl cream together butter with both sugars.
- Beat in vanilla, egg and milk.
- Stir flour mix into wet mix until well combined.
- Fold in both mint and white chocolate chips.
- Chill dough for 30-60 minutes.
- Place dough by tbl.
- Onto parchment lined cookie sheet.
- And press down lightly
- Bake 14-16 minutes or until desired doneness.
- Let stand a few minutes then transfer to wire rack for cooling.
- Serve and enjoy!
- Make about a dozen large sized cookies.
