Double-Baked Sweet Potatoes with Bacon and Cheese

  1. Heat oven to 400F.
  2. Prick potatoes in several places with fork.
  3. Bake 1 hour 15 min.
  4. or until tender.
  5. Cool slightly.
  6. Cut potatoes lengthwise in half; scoop out centres into medium bowl, leaving 1/4-inch-thick shells.
  7. Mash potato centres with cream cheese product until smooth.
  8. Stir in half the bacon.
  9. Spoon mashed potato mixture into potato shells; sprinkle with cheddar, then remaining bacon.
  10. Place on baking sheet.
  11. Bake 15 min.
  12. or until potatoes are heated through and cheddar is melted.
