Allegra McEvedy's oranges in tangiers recipe
- 6 tbsp Honey
- 100 g (3.5oz) Bulgar wheat
- 1 tbsp Orange blossom water
- 4 Oranges
- 100 g (3.5oz) Shelled pistachios
- Pour 150ml of boiling water into a bowl and stir in 3 tablespoons of honey and 1 tablespoon of orange blossom
- Pour the honey water over the bulgar, cover with a lid and simmer gently for about 10 minutes allowing the liquid to be absorbed
- Slice the oranges into segments and place into a bowl.
- Squeeze any remaining juice from the orange onto them
- Roughly chop the pistachios and mix with the rest of the honey and 1 tablespoons of water
- Place an 8cm wider pastry ring onto a plate, spoon a layer of the cooled bulgar into it and place the nut mixture on top
- Carefully remove the ring and decorate the plate with the orange segments
- Repeat the last 2 steps for each potion
