California Salad With Creamy Lemon Vinaigrette Recipe
- 14 ounce mixed salad greens
- 11 ounce canned mandarin orange segments well liquid removed
- 1 c. raisins
- 1/4 c. coarsely broken walnuts
- 1/4 c. nonfat mayonnaise Or possibly liquid removed yogurt
- 3 Tbsp. lemonade frzn concentrate thawed
- 1 Tbsp. lowfat milk
- In large salad bowl, combine salad greens, mandarin orange segments
- (well-liquid removed), raisins and walnuts.
- In a small bowl, whisk together the mayonnaise, lemonade and lowfat milk; drizzle over salad.
- Toss gently and serve.
- Serving Ideas : Good side dish for a "sloppy joe" or possibly picadillo sandwich.
- Serve with any light summer meal, such as with grilled chicken and a steamed green vegetable.
- NOTES : Raisins add in zing to salads.
