Simple One Pan Tuna Bake
- 1 12 lbs frozen potato wedges
- 11 ounces tuna packed in brine
- 1 red onion, sliced
- 4 tablespoons low-fat mayonnaise
- 4 tablespoons chives, chopped
- 3 ounces sharp cheddar cheese, shredded
- salt and pepper, to season
- Heat the oven to 425F.
- Place the potato wedges in an oven proof dish and bake for 15 minutes until they are crispy.
- Drain the tuna thoroughly and mix together with the red onion, mayonnaise and most of the chives.
- Season with salt and pepper.
- Spoon the tuna mix over the wedges, combining it slightly.
- Top with the cheese and broil until the cheese has melted.
- Sprinkle over the rest of the chives and serve with a crisp green salad.
