Mooers Chili

  1. Soak beans overnight in water 2-inches over the top of the beans.
  2. Simmer the beans, covered, until tender.
  3. Add tomatoes, juice and all.
  4. Saute in a separate pan: green peppers, onions and garlic in salad oil.
  5. Add parsley.
  6. In separate pan, melt butter and brown meat.
  7. Cook for 15 minutes.
  8. Add meat mixture to beans, add remaining spices and simmer, covered, for 1 hour, then uncovered for 30 minutes.
  9. Skim fat.
  10. If too thick, you can add tomato juice or V-8.
  11. This makes a big batch.
  12. Freezes very well.
