Strawberry and avocado salad with honey dressing recipe

• 2 tbsp olive oil
• 1 tbsp cider vinegar
• 1 tsp lemon juice
• 1 tsp honey
• 1 shallot, finely sliced
• 1 pinch rock salt
• 1 pinch black pepper
• 10 strawberries
• 1 bag of rocket
• 1 ripe avocado
• 1 handful pistachios, chopped

1. Whisk together the dressing ingredients in a small bowl and set aside.
2. Hull and quarter the strawberries.
3. Pit, peel and slice the avocado.
4. Tip the rocket into a bowl and toss in half of the dressing.
5. Scatter the dressed rocket on a serving plate and top with the avocado and strawberry slices.
6. Drizzle the remaining dressing over the slices and top with the chopped pistachios.
