Easy Tilapia Provencal
- 4 tilapia fillets (1 lb.)
- 1 small yellow squash, finely chopped
- 1 cup roasted red pepper strips, halved
- 1/4 cup quartered pitted Kalamata olives
- 1/3 cup KRAFT Balsamic Tomato Basil Vinaigrette Dressing
- 4 cloves garlic, minced
- 1/4 tsp. crushed red pepper
- 2 Tbsp. ATHENOS Traditional Crumbled Feta Cheese
- 2 Tbsp. chopped fresh basil
- Cook fish in large deep skillet sprayed with cooking spray on medium-high heat 2 min.
- on each side or until evenly browned on both sides.
- Remove from skillet; cover to keep warm.
- Combine all remaining ingredients except cheese and basil in skillet.
- Bring to boil, stirring frequently.
- Return fish to skillet; cover.
- Simmer on medium-low heat 6 to 8 min.
- or until fish flakes easily with fork.
- Top with cheese and basil.
