Cucumber and Grapefruit Cocktail Recipe OrganicBaker
- 4 cucumbers, peeled
- 5 pounds red grapefruit, quartered and peeled
- 1 handful mint leaves
- 1 cup organic cane sugar
- 2 cups water
- crushed ice
- vodka
- Bring sugar and water to boil over medium high heat.
- Remove from heat and allow syrup to cool at room temperature.
- After peeling cucumbers and grapefruit, process cucumber, grapefruit and mint through juicer.
- Discard pulp and transfer juice to a pitcher.
- Add syrup to juice.
- Stir well
- Place 3 parts juice mixture and one part vodka in a cocktail shaker over crushed ice.
- Shake until frothy.
- Pour into a chilled cocktail glass or serve over crushed ice.
- Garnish with cucumber spear.
