Pork Ribs with Apples

  1. Heat the oil in a large heavy pot.
  2. Season the pork chops with salt and pepper.
  3. Sear the pork chops on both sides, remove from the pot and set aside.
  4. Add the apples and onions to the pot and cook for 5 minutes.
  5. Add the wine, kraut, caraway seeds, and the juniper berries, cooking for 2 minutes.
  6. Add the stock, and the pork ribs, bring to a boil and reduce to a simmer.
  7. Cover and simmer for 40 minutes.
  8. Taste and adjust the seasonings.
  9. Tastes great with whole grain mustard.
